The great thing about working for The Pampered Chef is the recipes I get to try. Here’s one I did tonight:
Lil’ Citrus Muffins (this recipe is for mini-muffins, but I’m sure you could make regular muffins)
1 cup all-purpose flour (high altitude- add 1 Tbl)
1/2 t. baking powder
1/4 t. baking soda
1/8 t. salt
1/4 c. butter or margarine, softened (I used butter)
2/3 c. sugar
1/2 c. sour cream
1/2 t. vanilla
2 t. orange, lemon or lime zest (I used lemon, haven’t tried the others)
Preheat oven to 375. Lightly spray muffin pan with nonstick cooking spray or line with paper liners. In small bowl, combine flour, baking powder, baking soda and salt; mix well.
In larger mixing bowl, beat 1/4 c. softened butter and 2/3 c. sugar until well blended. Add egg; beat until smooth. Mix in sour cream, vanilla, and zest. Add flour mixture; mix just until dry ingredients are moistened. (Do not overmix.)
Drop a rounded scoop of batter into each muffin cup. Bake 12-13 minutes or until light golden brown. Do not overbake. Cool in pan 3 minutes; remove from pan. Cool slightly.
Dip tops of muffins into 2 Tbl melted butter/margarine and then into sugar (1/3 c).
Serve warm. Enjoy!
