Menu Plan Monday, I mean Saturday

One of the ways I can tell that I’m “healing” is that I’m motivated to do things again. I spent yesterday re-arranging and cleaning my office and I actually got some things done today as well. I mean, I’ve kept the house clean over the last year- but I’m motivated to actually take care of the house, etc.
One of the things that’s been hard recently is that we are tightening our budget. Which means we don’t go out to eat anymore. We have definitely been the double income, no kids couple that finds it more convenient to eat out than grocery shop (even when I’m home all day!). So now that I actually need to get groceries and keep up with food in our house, I’m back to planning menus. When I don’t do menus we both stare at the pantry and realize there’s nothing to eat. So today in a random bit of inspiration I made my menu for next week! I know, unbelievable! (I also cleaned out my magazine collection from my magazine holder, Peter Walsh would be proud!)
I was going to wait for Org Junkies Menu Plan Mondays, but I thought I’d share the menu with you today and a couple of the recipes on the days that I make them.
Here’s my menu:
Monday: Tacos
Tuesday: Grilled Chicken, Mashed potatoes and salad
Wednesday: Slow-Cooker Spaghetti (This is courtesy my cousin Ariana and is my first recipe from our family cookbook)
Thursday: Chicken Turnovers. My mom’s recipe- she always made it with tuna but Tim’s not a fan so it’ll be chicken tonight. (also in our family cookbook)
Friday: Baked Potato Soup and Sandwiches
Saturday: Grill out. That’s how I wrote it, not the westerner way of “BBQ”, but “grill out”- what have I become????
Stay tuned for the recipes- maybe I’ll wait until after we eat so I can include a review as well.

Its a good thing you do the menus. If I did it the menu would look more like:
Monday: 3 Musketeers
Tuesday: Kit Kat
Wednesday: Hershey’s with Almonds
Thursday: Milky Way
Friday: Ice Cream with M&Ms
Saturday: Mon-Fri blended into one extreme milkshake explosion.
